Students will gain an understanding of banquet menu planning; banquet service; advertising and marketing; trip planning; food costing; and employee relations. Students will continue hands-on experience as supervisors in the Skyline Bistro and the Skyline Conference Center, as well as participate in off-site events. Students will also complete a Travel Project in order to showcase their understanding of all aspects of trip planning.

Hotel/Lodge Grade 11: In this course, students will continue to deepen their technical knowledge and vocabulary of the Hospitality/Tourism management program. Students will gain experience in operating and managing a conference center; developing a business plan; hospitality and human resources; lending institutions and hospitality communication; and event planning. Students will continue hands-on experiences as supervisors in the Skyline Bistro and Skyline Conference Center, as well as at off-site events. Students will prepare a Junior Travel Project as well as a Personal Theme Restaurant Project, both of which will demonstrate their knowledge of the travel and restaurant industries. Students will continue to work on their professional portfolios.

Hotel/Lodge Grade 12: In this course, student will continue to expand their technical knowledge and vocabulary of the Hospitality/Tourism, with a special emphasis on management. Students will explore the principles of effective management in the context of the hospitality industry. Students will acquire knowledge of lounge management; international travel and geography; hotel and casino design; and NFTE entrepreneurship. Students will also participate in the ServSafe program; an 10-hour OSHA training program; and CPR/AED training. Students meeting the necessary requirements will participate in a co-operative education program in which they will practice their skills in off-site paid job opportunities. Students will complete their professional portfolios in preparation for college applications or post graduation job opportunities.
